Apricot Glazed Chicken Drumsticks

Ingredients

- 1.5 lbs / 0.7kg chicken drumsticks 

½ cup Apricot jam

2 tablespoons apple cider vinegar

2 teaspoon Dijon mustard

1 teaspoon garlic powder

½ teaspoon cayenne pepper

½ teaspoon soy sauce

½ teaspoon salt

¼ teaspoon ground black pepper

2 tablespoons parsley, chopped

 

Apricot Glazed Chicken Drumsticks

 

Instructions

Step 1: Preheat the oven to 350 degrees Fahrenheit.

Step 2: In a large bowl, whisk together Apricot jam, apple cider vinegar, Dijon mustard, garlic powder, cayenne pepper, soy sauce, salt, and pepper until combined.

Step 3: Add chicken drumsticks to the Apricot jam mixture and toss well to coat. Let it marinate for 15 minutes for the flavours to infuse.

Step 4: Spray a 2-quart baking dish with non-stick spray and transfer the marinated chicken drumsticks to the baking dish along with the Apricot jam mixture.

Step 5: Bake for about 40 minutes until the internal temperature of chicken registers 165 degrees Fahrenheit. Turn on the broiler and broiler for 5 minutes and watch carefully to not burn the chicken drumsticks.

Step 5: Remove from oven and let it sit for 5 minutes, sprinkle with chopped parsley before serving. Apricot glazed chicken drumsticks are ready.

Step 6: Refrigerate the leftover chicken drumsticks in the airtight container and consume within 2 - 3 days.
