Gluten Free Apricot Jam & Chai Loaf

  • 3/4 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 cup prepared chai tea
  • 1/3 cup milk
  • 2 tsp. vanilla extract
  • 2 cups gluten free all purpose flour blend
  • 2 tsp. baking powder
  • 3/4 tsp. ground cardamom
  • 1/2 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. ground cloves
  • 1/2 cup GOOD GOOD Apricot Jam



  • 1 cup powdered sugar
  • 1/4 tsp. vanilla extract
  • 3-5 tsp. Milk
  • Additional ground cinnamon for sprinkling



1. Preheat and Prepare:

Preheat your oven to 350°F. Grease a loaf pan and line it with parchment paper for easy removal.

2. Prepare the Batter:

In a large bowl, beat sugar and softened butter until fluffy. Add eggs, prepared chai tea, milk, and vanilla extract. Mix until well combined.

3. Combine Dry Ingredients:

In a separate bowl, whisk together gluten free flour, baking powder, ground cardamom, salt, ground cinnamon, and ground cloves.

4. Mix Wet and Dry Ingredients:

Gradually add the dry ingredients to the wet ingredients, mixing until well incorporated. Gently fold in GOOD GOOD Apricot Jam.

5. Bake to Perfection:

Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. In a small bowl, mix powdered sugar, vanilla extract, and milk until a smooth glaze forms. Adjust the consistency by adding more milk if necessary. Spread the glaze over the cooled loaf and sprinkle with additional ground cinnamon.
