Diabetic Friendly Cherry Cheesecake

Ingredients

For those with a sweet tooth and a health conscious mindset, our Diabetic Friendly Cherry Cheesecake is a dream come true. This luscious dessert combines the creamy richness of cheesecake with the tartness of cherries, creating a heavenly treat that's both decadent and diabetic friendly. With GOOD GOOD Cherry Jam taking center stage, this dessert promises satisfaction with every bite, all while being mindful of your health.

 

Ingredients:

Crust:

  • 1 1/2 cups almond flour (or almond meal)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup melted coconut oil or unsalted butter

Cheesecake:

  • 3 packages (24 ounces) reducedfat cream cheese, softened
  • 1 cup powdered erythritol (or your preferred sugar substitute)
  • 1 teaspoon vanilla extract
  • 3 large eggs

Topping:

  • 1 cup  GOOD GOOD Cherry Jam
  • Fresh whole cherries, pitted, for garnish (or raspberries if they’re out of season)

 

Directions:

1. Preheat and Prepare:

Preheat your oven to 325°F. Grease a 9inch springform pan.

2. Prepare the Crust:

In a mixing bowl, combine almond flour, cocoa powder, and melted coconut oil (or butter). Press the mixture firmly into the bottom of the prepared springform pan. Bake the crust for 10 minutes, then remove from the oven and let it cool while you prepare the filling.

3. Make Cheesecake Filling:

In a large mixing bowl, beat the softened reduced fat cream cheese, powdered erythritol, and vanilla extract until smooth and creamy. Add the eggs, one at a time, mixing well after each addition.

4. Assemble the Cheesecake:

Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

5. Add Cherry Jam Layer:

Spread the cherry jam evenly over the top of the cheesecake layer.

6. Bake to Perfection:

Bake the cheesecake in the 325°F preheated oven for 5560 minutes or until the center is set. The edges might slightly brown, but the center should still be slightly jiggly.

7. Cool and Set:

Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight to set completely.

8. Garnish and Serve:

Before serving, remove the sides of the springform pan. Garnish the top of the cheesecake with fresh whole cherries or raspberries, placing them evenly over the cherry jam layer.
